In June 2021, David Hemmerlé took over as Grand Cru Head Chef.
“I treat the products I use like terroir wine: behind them there are always people who put their heart and soul into their creation. My task is to find such associates. The French classical school is the foundation. Based on it, I create modern dishes in my author’s style. I put care and the feeling of a holiday into them: a bright emotion – that’s why people return to the restaurant”.
David was the head chef of Yannick Alleno’s Pavillon Ledoyen restaurant (Paris, 3 * Michelin), restaurants in 5 * Hotel One & Only (Dubai) and Four Seasons (Moscow), worked with chefs Michel Del Burgo and Laurent Purcell in the modern healthy fine dining style.
